Rest and Serve

Finish

Here is your Guyanese-style pineapple cobbler! Once the biscuit topping is golden and the pineapple filling is bubbling, let the cobbler rest for about 30 minutes, then dust it lightly with cinnamon sugar. Serve it warm with a scoop of butter pecan ice cream for a comforting finish to any family dinner or celebration.

Scaling for Events:

One batch makes approximately 10–12 servings, making it a good choice for family dinners and small gatherings. For 10–12 guests: Prepare one batch. For 20–24 guests: Double the ingredients and divide the mixture between two baking dishes. For larger events: Prepare multiple batches rather than using one very deep pan. This helps the biscuit topping bake evenly and keeps the pineapple filling from becoming too watery. For catering events: Prepare the pineapple filling and glaze ahead of time if needed. Add the biscuit topping closer to baking so it stays tender and bakes properly. For a Caribbean-inspired dessert spread, you can also serve Guyanese Pine Tarts alongside this warm pineapple cobbler.

Chef’s Tip:

The secret to a flavorful rum pineapple cobbler is reducing the pineapple juices separately with brown sugar after removing the cooked fruit. This creates a thick, rich glaze that adds flavor without making the biscuit topping soggy. Choose ripe, sweet pineapples for the best results, and keep the butter cold when making the biscuit dough. Cold butter helps create a tender topping with a light, crumbly texture. For another comforting Caribbean dessert, try our Guyanese Rum & Sweet Potato Bread Pudding.
