Ingredients

For Pudding:

  • 4 (8 oz) Cold blocks cream cheese
  • 4 (5.1 oz) instant vanilla pudding mix boxes
  • 4 (12 oz) cold evaporated milk cans
  • 1 (14 oz) cold sweetened condensed milk (adjust to taste)
  • 3 pack buttery shortbread cookies

For Peach Cobbler Filling:

  • 6–8 fresh ripe peaches, peeled and diced
  • 1 stick butter
  • 3 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3 drops rum extract
  • Honey, to taste (optional, if peaches need extra sweetness)

For Maple Rum Walnuts:

  • 1 stick butter
  • 1½ cups chopped walnuts
  • ½ cup maple syrup
  • 3 drops brown rum extract (or a splash of dark rum, if preferred)
  • Pinch of salt

For Toppings:

  • Caramel sauce, for drizzling

Instructions

Step 01: Start With Making Pudding

  1. In a stand mixer, combine the 4 instant vanilla pudding mix with the cold evaporated milk.
  2. Start mixing it on medium speed until it begins to thicken.
  3. Gradually add the cold cream cheese, make sure you add one piece at a time, mix it until completely smooth.
  4. Slowly pour in the sweetened condensed milk and continue mixing until fully incorporated and silky smooth.
  5. Cover and refrigerate for at least 5 hours, preferably overnight, to allow the pudding to completely set.

Step 02: Make Peach Cobbler Filling

  1. Melt 1 stick of butter in a large skillet over medium heat.
  2. Add the diced peaches.
  3. Stir cinnamon, nutmeg, and rum extract in it.
  4. Drizzle honey if your peaches need a little extra sweetness.
  5. Cook for 8–10 minutes until the peaches are soft and syrupy.
  6. Remove from the heat and allow it to cool completely.

Step 03: Make Maple Rum Walnuts

  1. Melt 1 stick of butter in a skillet.
  2. Add the chopped walnuts and toast for 2–3 minutes.
  3. Stir in the maple syrup and brown rum extract.
  4. Continue cooking until the mixture becomes thick, glossy, and sticky.
  5. Finish with a pinch of salt and allow to cool slightly.

Assemble

  1. Line the bottom of a large trifle dish with a layer of buttery shortbread cookies.
  2. Spread a generous layer of the vanilla pudding.
  3. Spoon over some of the peach cobbler filling.
  4. Sprinkle on the maple rum walnuts.
  5. Repeat the layering process:
  • Shortbread cookies
  • Pudding
  • Peach filling
  • Maple walnuts

6. Continue layering until the dish is full.

 

Finish

Top with:

  • Remaining peach cobbler filling
  • Maple rum walnuts
  • A generous drizzle of caramel sauce

Cover and refrigerate for 2–4 hours (or overnight) before serving so that the flavors can combine together.

Scaling for Events:

One batch of this creamy peach pudding recipe serves approximately 16 to 20 persons. For grand events catering, we recommend multiplying the recipe based on your guests count. A double batch of peach cobbler banana pudding serves 35 to 40 guests, while a triple batch serves 55 to 60 guests without compromising the flavor and texture.
